Ty’s Gluten Free Spinach Quiche




2 Rudi’s Gluten free tortillas

1 c heavy cream

1 c almond milk or milk of your choice

4 eggs

2 Tbsp chopped onion

1 c shredded cheddar cheese, montery jack or italian blend

1 c of chopped spinach, well drained if using frozen

dash of red pepper flakes

Preheat oven to 425’

Spray a 9 inch pie plate with coconut oil spray. Place 2 tortillas in the plate. If you tear one in half you can move them around the plate to cover the bottom and sides. If that doesn’t work, use a third tortilla.DSC_0003

Next, sprinkle the cheese, spinach and onion over the tortillas. In  a bowl combine eggs, milk and heavy cream and mix well. Pour this mixure over the tortillas. Sprinkle with just a little red pepper flakes. (not necessary)



Bake for 15 minutes on 425’. Lower to 325’ for about 45 minutes. Test to make sure egg is cooked through. Season with salt and pepper

Enjoy with a salad or some fresh fruit.DSC_0014
