Ty’s Gluten Free Spinach Quiche
2 Rudi’s Gluten free tortillas
1 c heavy cream
1 c almond milk or milk of your choice
2 Tbsp chopped onion
1 c shredded cheddar cheese, montery jack or italian blend
1 c of chopped spinach, well drained if using frozen
dash of red pepper flakes
Preheat oven to 425’
Spray a 9 inch pie plate with coconut oil spray. Place 2 tortillas in the plate. If you tear one in half you can move them around the plate to cover the bottom and sides. If that doesn’t work, use a third tortilla.
Next, sprinkle the cheese, spinach and onion over the tortillas. In a bowl combine eggs, milk and heavy cream and mix well. Pour this mixure over the tortillas. Sprinkle with just a little red pepper flakes. (not necessary)
Enjoy with a salad or some fresh fruit.
