Gluten-free Meatloaf

You can use this recipe for an easy week night dinner with gluten-free pasta and my fruit salad on this recipe.

Ingredients:

  • 1 pound lean ground beef
  • ½ cup ground corn chex cereal
  • ½ cup almond milk
  • 1 10 oz. can of Rotel mild tomatoes
  • 2 Tbsp. chopped red onion
  • Salt and pepper

Directions:

Pre-heat oven to 400°. Mix all ingredients in a medium sized bowl.

Grease a 9×5 in. loaf pan and pour the meat mixture into the pan. Bake for 45 minuets – 1 hr. Check after 45 minutes for doneness.
