Gluten-free Reuben Sandwich

Did you hear? Udi’s now has Gluten-free Rye bread! My moms favorite sandwich is a Corned Beef Reuben sandwich on rye so when we saw this bread in the store we immediately thought of Reubens.

Ingredients:

  • 2 lb corned beef (ours shrinked in the crock pot)
  • 1 loaf of Udi’s Rye Style bread
  • Thousand Island dressing
  • 5-10 slices of swiss cheese
  • 1 cup of sauerkraut
  • butter

Directions:

First, cook the corned beef according to directions on package. Then, shred the corned beef and  place it on a plate. In a small sauce pan, heat the sauerkraut.

Next, heat a skillet on medium. Lets start the sandwich. Place a thin layer of thousand island dressing on both pieces of bread. We put a slice of swiss, then corned beef. Put sauerkraut on top of the corned beef and add another slice of swiss to hold it all together once it melts. Top with other slice of bread and start grilling.

You’ll know its done when the cheese comes out the sides. 🙂
Serve with fries and ketchup.
