My dad has made this dish for so long and its absolutely delicious! Lets get started!
2 cups Chex cereal crushed
1/4 cup shredded parmesan cheese
1 cup milk
Mozzarella cheese or Ricotta cheese
Turn on oven to 350’
Mix egg and milk in one bowl. Put crushed chex and parmesan cheese in another bowl or on a plate.
Peel and slice eggplant about 1/2 inch thick. Spray a baking pan with Gluten Free non stick spray such as Pam coconut oil spray.
Dip the eggplant in the milk/egg and then coat it in the chex/parmesan mixture. You can dip both sides or just one.
Place on baking tray. Continue with all eggplant slices and then place in oven for about 15 min. Check for doneness.
Once eggplant is cooked, you can either eat just as it is with sauce and gluten free pasta or….
Spray a baking dish with non stick spray. Put enough of sauce the in bottom to coat the entire bottom of dish. Put a layer of eggplant, top with mozzarella cheese or ricotta cheese and sauce. (Here’s my Mom’s sauce recipe!)
Repeat layers. Place in over at 350 for about 15-20 minutes until heated through and cheese is melted.
You can also add some pasta and more parmesan cheese! 🙂
