Gluten-free Funnel Cakes

I still remember getting these at Disney World all the time!

  • 1 1/3 cup gluten-free Pancake Mix
  • 1/4 cup water
  • 3 large eggs
  • 3 teaspoons vanilla extract
  • Powdered sugar for topping
  • Vegetable or Coconut oil for frying

Directions:

Whisk together the water, eggs, pancake mix, and vanilla.

Pour batter into a squeeze bottle, plastic sandwich bag with the corner cut off, or an empty and clean ketchup bottle. Heat the oil in a small pan. Test the oil to make sure it is hot enough by dropping a small amount of batter into the pan. It should fry golden brown and sizzle quickly without burning. When oil is ready, squeeze the batter in a circular motion into the frying pan.

Cook about 30 seconds-1 minute until golden brown. Flip funnel cake and cook the other side, about 30 seconds or until golden brown. Remove from the oil and transfer to a plate lined with paper towels.

Sprinkle with powdered sugar and serve warm.
