Happy early May The 4th Be With You! I was going to post this tomorrow but I wanted to put it up a day early in case you want to use this recipe tomorrow!
- 2 cups gluten free Flour
- 1 teaspoon xantham gum
- 3/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup sugar
- 5 tablespoons powdered sugar
- 4 oz. cream cheese, at room temperature
- 4 tablespoons butter, at room temperature
- 1 egg, at room temperature
- 1/2 teaspoon vanilla extract
Preheat your oven to 350′. In a large bowl combine all dry ingredients. In another large bowl mix the cream cheese, butter, egg, and vanilla. Then slowly add the dry ingredients into the wet ingredients. Kneed the dough for 5 minutes.
Roll the dough to about 1/3 inch thick. Cut a circle out of the dough using a circle cookie cutter. Then using a smaller circle cookie cutter, cut a circle and then cut it in half to for the head. Attach the head to the body by pinching them together. Bake them for 10 minutes. Allow them to cool for 15 minutes.
For the icing:
- 1/3 cup butter, softened
- 2 cups powdered sugar
- 1 – 2 Tablespoons milk
- 1 tsp vanilla
Mix the powdered sugar, vanilla, butter, and 1 tablespoon of milk in a bowl. Add more milk until a soft texture is formed.
